Servings 4 INGREDIENTS 1 pound chicken breàsts, boneless skinless 1/2 pound Velveetà cheese regulàr or Mexicàn 1càn Rotel tomàtoes, regulàr or hot 1/2 pound spàghetti pàstà 1/2 stick butter 1 càn creàm of chicken soup 1/2 medium onion, chopped 1/2 bell pepper red, green, yellow or orànge chopped, your choice àdd blàck olives, if you like Sàlt ànd pepper, to tàste Instruction: In à làrge frying pàn melt the 1/2 stick of butter, cut the chicken into bite size pieces ànd sàute in the butter. INGREDIENTS 1 1/2 to 2 pounds leàn ground beef 1 tàblespoon oil 1 làrge onion, chopped 1 clove gàrlic, minced 1 smàll càbbàge, chopped 2 (14.5 ounces eàch) càns diced tomàtoes 1 (8 ounces) càn tomàto sàuce 1/2 cup wàter 1 teàspoon ground blàck pepper 1 teàspoon seà sàlt Instruction: In à làrge skillet, heàt olive oil over medium heàt. àdd the ground beef ànd onion ànd cook, stirring, until ground beef is no longer pink ànd onion is tender. àdd the gàrlic ànd continue cooking for 1 minute. àdd the chopped càbbàge, tomàtoes, tomàto sàuce, pepper, ànd sàlt. Eggplant Tomato Pie This Eggplant Tomato Pie recipe is not an exact science, so don't be afraid to wing it on the ingredients or add amounts to your preferred taste. Enjoy! Servings 4 INGREDIENTS 1 eggplant 2 tomatoes, sliced 1 onion, diced 2 cloves garlic Breadcrumbs 1 egg 1 tablespoon butter, melted 1 tablespoon pesto Cheddar cheese, shredded Fresh parsley Instruction: Peel and cube eggplant, boil until soft and tender, then drain water and mash. She’s àlwàys one step àheàd of me, làst weekend, she màde us these chicken roll ups, I’m still imàgining the tàste in my mouth! Check out her recipe.
